Aside from copying melodic lines, making your own original tunes actually helps a lot when it comes to learning to play by ear. when you create original songs, you are playing what you "hear" from your brain instead of outside sounds. being able to play what you "hear" from your mind is pretty much the essence of being able to play what you hear.. When i play by ear i am certainly not thinking "ok it sounds like a minor 2nd interval, and i'm on an e right now so the next note is an f." when i play by ear i turn my brain off and let the ear to muscle memory coordination that i have built up through practice take over.. Most people here are talking about "figuring out" the notes to a song, but that's not really playing by ear. playing by ear is knowing how to play the song, in any key, just from hearing it. this takes ear training, but not interval training. you need to learn to recognize scale tones that you hear in a song, instead of the actual notes..
